How to make top-quality wine brandy

My name is Zaviša Njagojević, an oenologist by profession, and in this e-book I will show you how to make your top-quality wine brandy by applying two methods, one of which is classical but modern and scientific, and the other is accelerated and also scientific and experiential.
I wrote the e-book with the desire to help all lovers of this favorite natural strong alcoholic drink to produce it on their own.
I used my experience, our literature as well as literature taken from Russian sources.

Balkan cognac
Vinjak(Our the best wine brandy) is a strong alcoholic drink obtained by distilling wine with or without lees into a distillate that matures in an oak barrel or cask after distillation. As a finished product, wine brandy must contain at least 37.5% vol. alcohol. Most often it is a drink with 40% vol.
It is produced in the same way as French cognac.

What grape varieties
In general, native grape varieties are suitable for the production of quality wine brandy. In our region, these would be Smederevka, Rkaciteli and Župljanka. These are varieties that give wines with a neutral aroma and produce two or more wagons of grapes per hectare and have a high acid content. Red grape varieties are not the most suitable for wine brandy.

What equipment
When it comes to wine distillation apparatus for the production of vinjak, the most famous are the so-called distillation apparatus. of the Charente type, named after the French department of Charente, where the town of Cognac is located, after which their cognac was named.
With us, the most suitable devices are those with a deep bottom and a bottom thickness of at least 6 mm.

Famous wines from the French region of Charente with the city of Cognac are obtained from the grape variety that has all the predispositions for obtaining a superior distillate. These are the varieties Ugni Blanc , Folle Blanche and Colombard .
French limousine oak is also famous, which gives a unique stamp to French cognac.

The wine distillation scheme for French cognac is described in detail in the book. Acting according to this scheme, using high-quality wine and cauldrons with a deep bottom, we will get high-quality wine distillate or vinjak.

Let’s make it better
High-quality wine brandy is obtained only in the Charant type apparatus. Cauldrons of the Charant type are produced here by the company ” Barbut ” from Prokuplje.
On ordinary distillation apparatus, high-quality wine distillate can also be obtained, provided that the distillation of the wine is conducted for 5-6 hours and two redistillations are performed as described in the e-book.
